Recipe - Steak and Sweet Potato Saag

Learn this quick and simple recipe to create this awesome dish!
Ingredients:
250 gram Steak
300ml water
1 Small Sweet Potato (Diced into 1cm cubes)
6-8 cherry tomatoes (Halved)
1/2 Red Onion (Finely chopped)
1 Clove of Garlic (Crushed)
1/3 Bag of Baby Spinach
Ground Coriander
Turmeric
Ground Cumin
Crushed Chillies
Add a table spoon of oil to a pan and begin frying the potato on a high heat.
The sweet potato doesn't need to be cooked through just starting to go soft.
Add the onions and the cherry tomatoes and mix together over the heat.
Cook for 1-2 minutes, intermittently stirring until tomatoes are going soft, and onions are translucent.
Add garlic, and a tablespoon of each spice, stir together until the mix is coated with spice.
Add approximately 250 ml of water and stir into the mixture, bring this to a simmer then add your spinach. Stir until the spinach is wilting.
Turn the heat down and allow the mix to simmer, you want all of the water to evaporate by the end of the cook.
Season and oil your steak and lay it on a hot griddle pan. Turn it every minute for about 5 minutes (depending on the thickness of the steak) to ensure an even cook.
Once cooked rest your steak on a warm plate or chopping board, wait about 4-5 minutes.
Once all the water has evaporated from the saag mixture, but is still moist, serve in a warm dish.
Once rested cut the steak into 1 cm thick slices and serve on top of the saag.
